I’ve found joy in cooking meals that are not only nutritious but also simple to prepare. Today, I want to share with you a favorite recipe of mine that captures the essence of our vibrant community — a delicious, easy-to-make Chicken and Vegetable Stir-Fry. This dish is perfect for a quick, healthy dinner that doesn’t skimp on flavor.

Ingredients:
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- 1 bell pepper, sliced (any color you like)
- 1 medium zucchini, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce (low sodium if preferred)
- 1 teaspoon sesame oil (optional for flavor)
- Salt and pepper to taste
- Cooked rice, to serve
Instructions:
- Prepare Your Ingredients: Start by slicing your chicken and vegetables. Keeping everything approximately the same size ensures they cook evenly.
- Heat Your Pan: In a large skillet or wok, heat the olive oil over medium-high heat. Once hot, add the sliced chicken. Season with a pinch of salt and pepper. Stir-fry until the chicken is golden and cooked through, about 5-7 minutes. Remove the chicken and set it aside on a plate.
- Cook the Vegetables: In the same pan, add a little more olive oil if needed, then toss in the garlic, onions, bell pepper, and zucchini. Stir-fry the vegetables until they are tender-crisp, about 5 minutes.
- Combine and Season: Return the chicken to the pan with the vegetables. Pour in the soy sauce and sesame oil if using. Stir everything together and cook for another 2-3 minutes to let the flavors meld.
- Serve: Serve your stir-fry hot over cooked rice. This not only makes a satisfying meal but also ensures you’re getting a good mix of protein, veggies, and carbs.
Tips:
- Variety: Feel free to swap out any of the vegetables for what you have on hand. Broccoli, carrots, or snap peas make great additions.
